Low Fat Turkey Frittata
Ingredients:
1 package (11 ounces) ButterballĀ® Turkey Bacon
6 ounces dry angel hair pasta, broken in half
2 teaspoons olive oil
1 small onion, finely chopped
1 medium red bell pepper, cut in thin strips
16 ounces Egg BeatersĀ® Egg Product
5 ounces fat-free ricotta cheese
4 ounces shredded fat-free mozzarella cheese
4 ounces low-fat Swiss cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1 package (10 ounces) frozen spinach, thawed, squeezed dry
PAMĀ® Original No-Stick Cooking Spray
spicy bottled salsa, optional

Directions:
Preheat oven 350 degrees F.
Cook bacon in microwave according to directions on package, crumble and set aside.
Cook pasta according to directions on package, drain and set aside.
Heat oil in large skillet over medium heat until hot. Add onion and pepper and cook until onions are tender, stirring frequently.
Combine egg substitute, cheeses, salt, pepper and cooked pasta in large bowl. Add vegetables, spinach and turkey bacon.
Spray a 10-inch quiche dish with cooking spray; pour mixture into dish. Bake 30 minutes or until knife inserted comes out clean. Cut into wedges. Serve with spicy salsa, if desired.
