Mushroom Fritters


1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs, separated
1/3 c.milk
A little nutmeg
3/4 c. chopped sauteed mushrooms
2 tsp. chopped chives or onion


Sift dry ingredients into a bowl. Combine egg yolks and milk and add to dry ingredients. Beat egg whites to peaks and fold into dry ingredients alternately with mushrooms and chives or onion. Drop by teaspoonful into hot fat (375 degrees) until brown. Drain on paper towels.
