Ingredients:
3 eggs
1/2 c. milk
3 Tbs. finely chopped onion
3 Tbs. finely chopped celery
3 Tbs. finely chopped broccoli
2 Tbs. chopped carrots
2 Tbs. chopped pimiento
3 bacon strips, cooked and crumbled
1/2 tsp. salt
1/4 tsp. pepper
1 Tbs. butter
4 thin slices process American cheese

1 Tbs. butter

Directions:
Beat eggs with milk just until combined. Stir in the vegetables, bacon, salt and pepper. In a medium skillet, melt butter over medium heat; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are set, transfer to a warm platter and top with cheese.
Makes 1-2 Servings
