Ingredients:
3 c. frozen hash brown potatoes
18 eggs, beaten
2 1/3 c. chopped cooked ham
1 1/4 c. chopped tomato, divided
1 c. chopped green pepper, divided
1/3 c. chopped onion
1 1/2 c. shredded Cheddar cheese

Directions:
Cook potatoes according to pkg. directions; drain well. Combine potatoes, eggs, ham, 1 c. tomato, 3/4 c. green pepper and onion in a large bowl; stir well. Pour mixture into a lightly greased 13x9x2" baking dish.
Bake, uncovered, at 325 for 40 minutes. Top with remaining 1/4 c. tomato and 1/4 c. green pepper. Sprinkle evenly with cheese. Bake an additional 5 minutes or until cheese melts.
Makes 12 Servings
