Oven-Fried Chicken


1/4 c. butter, melted
1/2 tsp. salt
1/4 tsp. pepper
1 2 1/2 to 3 lb.fryer, cut up
1 c. crushed cornflakes or crushed potato chips or 1/2 c. fine dry bread crumbs


Combine butter, salt, and pepper. Brush chicken with butter mixture then roll in crumbs. Place chicken, skin side up, without touching in an ungreased, large shallow baking pan. Bake at 375 till tender, about 1 hour. Do not turn. Season to taste with salt.
