Oyster Soup
Ingredients:
1 (12 oz.) can fresh oysters
4 Tbs. butter
1/4 c. chopped onions
4 Tbs. flour
1 1/8 c. milk
1 sm. can evaporated milk
Salt and white pepper to taste

Directions:
Saute onions in butter until soft; add seasonings and flour
Stir constantly over low heat until mixture thickens. Poach oysters in own liquid until curly; do not overcook. Add to flour mixture and cook until bubbly. Add milk, stirring constantly until steaming; do not boil. Serve with oyster crackers.
