Split Pea Soup
Ingredients:
1/2 c. chopped onion
1 Tbs. butter
2 c. split peas
1 ham bone or 8-10 oz. lean ham chopped in large pieces
6 c. water
1/2 tsp. salt (optional)
1 tsp. basil
1/4 tsp. thyme
1 bay leaf

1 bay leaf
Directions:
In a large stockpot, saute onion in butter until tender. Add split peas, ham bone and water. Stir in seasonings and cook until peas are tender.
Discard hambone and bay leaf.
To thicken, remove 2 c. of soup and puree in a blender until smooth. Return pureed soup to pot, stirring until blended. Serve warm. Makes 8 cups.
