Pineapple Cookies
Ingredients:
COOKIES:
1/4 c. mashed banana
1/4 c. unsweetened frozen concentrated pineapple juice
1/4 c. vegetable oil
1 egg
1 Tbs. milk
1 c. unbleached white flour
1/4 tsp. baking soda
1/2 c. flaked coconut
TOPPING:
Grated orange rind
COOKIES:
1/4 c. mashed banana
1/4 c. unsweetened frozen concentrated pineapple juice
1/4 c. vegetable oil
1 egg
1 Tbs. milk
1 c. unbleached white flour
1/4 tsp. baking soda
1/2 c. flaked coconut
TOPPING:
Grated orange rind
Directions:
In a medium-sized mixing bowl beat together mashed banana, pineapple juice concentrate. oil, egg and milk until creamy. Add flour, baking soda and flaked coconut. Beat well. Drop by rounded teaspoonfuls onto oiled sheets and sprinkle with grated oranger rind. Bake at 350 for 8 minutes or until just brown around the edges and firm to the touch. Cool on wire racks. Makes 25 to 30 cookies.
