Pineapple Upside Down Cake
Ingredients:
3 Tbs. brown sugar
3 Tbs. butter
5 slices pineapple
Spread the sugar and butter in baking pan, then heat and melt them. Arrange the pineapple on top, and cover it with the sponge batter that follows.
3 egg yolks
1/2 c. sugar
1/4 c. boiling water
1/2 tsp. lemon flavoring
3/4 c. cake flour
1 tsp. baking powder
1/4 tsp. salt

Beat the egg yolks thoroughly. Add the sugar, boiling water and lemon flavoring. Mix them for 1 minute. Sift together and add the flour, baking powder and salt. Beat this mixture quickly for about 1/2 minute before pouring it over the pineapple as instructed above. Bake at 350 for 25 to 30 minutes. Turn cake upside down on plate to serve it.
