Potato Puffs
Ingredients:
2 c. cold mashed potatoes
1 egg, beaten
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. grated American cheese
Fine dry bread crumbs
Shortening

Directions:
Combine potato, egg, salt, pepper and cheese. Shape into balls and roll in crumbs. Heat deep fryer to 375 degrees. Fry balls until brown, about 3 minutes. Put balls on paper towels to drain. Serve hot.
