Potato Tacos
Ingredients:
4 baking potatoes
1 lb. ground beef
1 red chili pepper, diced
1/3 c. chopped onion
1/3 c. chopped green pepper
1 8 oz can stewed tomatoes
1 6 oz. can tomato paste
2 Tbs. water
2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. cumin
1/4 tsp. pepper
shredded letuce
1/4 c. shredded cheddar cheese

1 lb. ground beef

1/3 c. chopped green pepper
1 8 oz can stewed tomatoes
1 6 oz. can tomato paste

1/4 tsp. cumin
1/4 tsp. pepper

1/4 c. shredded cheddar cheese
Directions:
Preheat oven to 450 degrees. Prick potatoes with a fork and bake 1 hour. Cook beef over medium heat, stirring frequently, until browned. Add chili pepper, onion and green pepper; saute 5 minutes. Add tomatoes, tomato paste, water and seaonings. Simmer, uncovered, 30 minutes. Cut a slit in each potato; open, scoop out potato, leaving a 1/2" thick shell. Line each with lettuce; fill with 1/4 of taco mixture; top with cheese.
