Potato Pancakes
Ingredients:
1 c. mashed potatoes
1 c. milk
1/2 c. flour
2 eggs, separated
2 tsp. baking powder
1 c. mashed potatoes

Directions:
Add egg yolks to mashed potatoes and beat. Stir in flour and baking powder alternately with milk. Fold in stiffly beaten egg whites. Drop by spoonfuls onto a hot greased griddle and bake. Makes about 12 cakes.
