Puffed Potato Patties
Ingredients:
1/2 c. flour
1 tsp. baking powder
1 1/2 tsp. salt
1/4 tsp. black pepper
1 1/2 c. mashed potatoes
1 tsp. minced onion
2 eggs, slightly beaten
1/4 c. shortening

Directions:
Blend the first 4 ingredients in a bowl. Add mashed potatoes, onion,and eggs, mix well.
Heat shortening in a large skillet. Drop mixture by tablespoonfuls into hot fat, turning to brown evenly.
