Sweet Potato Pie
Ingredients:
CRUST
Pastry for one-crust pie
FILLING
1 1/2 c. mashed canned sweet potatoes
2/3 c. brown sugar
1 c. half-and-half
1 tsp. cinnamon
1/2 tsp. allspice
1 Tbs. dry sherry or lemon juice
2 eggs, beaten

Directions:
In blender, combine all filling ingredients; blend well. Pour into pie shell.
Bake at 425 for 15 minutes. Reduce oven temperature to 350; bake an additional 30 to 40 minutes or until pie is set in the center. Cool completely.
