Raisin Filled Cookies
Ingredients:
3 eggs
2 c. brown sugar
1/2 c. white sugar
1 c. margarine
1 c. milk
2 1/2 tsp. baking powder
flour
FILLING:
2 c. raisins
1 1/2 c. sugar
1 1/2 c. water (add more if needed)
3 Tbs. flour
1 tsp. vanilla

FILLING:
2 c. raisins
1 1/2 c. sugar
1 1/2 c. water (add more if needed)
3 Tbs. flour
1 tsp. vanilla
Directions:
For dough, mix all ingredients except flour. Mix well. Add enough flour to make a dough stiff enough to roll. Roll in batches on a floured board. Use a round cookie cutter ( I use a diamond shape) to cut cookies. Bake at 350 degrees for about 9 minutes. Cool. Cookies will be hard.
Filling:
Mix raisins, sugar and water. Cook until raisins are tender. Thicken with 3 Tbs. flour mixed with a little water. Add 1 tsp. vanilla.
After filling has cooled spread on cookies, making a sandwich. Place in a large pan lined with clean dish towels. Cover tightly and store in a cool place for a few day, until cookies soften.
