Reuben Casserole
Ingredients:
1 8 oz. can sauerkraut
1/8 tsp. caraway seed
1 small tomato, cut in thin wedges
2 Tbs. thousand island salad dressing
1 4 oz. pkg. thinly sliced corned beef, cut up
1/4 c. shredded Swiss cheese
1/4 c. soft rye bread crumbs
2 tsp. butter, melted
1 8 oz. can sauerkraut

Directions:
Drain sauerkraut; place in 3 c. baking dish. Sprinkle with caraway; top with tomato wedges, salad dressing, and beef. Top with Swiss cheese. Toss bread crumbs with butter; sprinkle over casserole. Bake at 375 till heated through, 25 to 30 minutes.
Makes 2 Servings
