Roast Fresh Ham
Ingredients:
1 whole fresh ham (7-8 lbs.)
light marmalade to half-cover
1/2 stick butter
caraway deeds (opt.)
Salt and pepper to taste
1 lg. onion, sliced

Directions:
Make a marinade of water, wine vinegar, onion. bay leaf, spices to taste, taking care not to have it too sour (1/3 vinegar to 2/3 water, at most), and bring it to a boil. Pour boiling liquid over meat and let stand for 24 hours, turning occasionally. Wipe meat dry. Rub well with salt, sprinkle with pepper and caraway seed, and roast in 500 degree oven, basting first with butter. When meat fat begins to melt, baste with the pan drippings. Once meat begins to brown on top, add onion, reduce heat to to 300 degrees, and continue to roast until thoroughly done, basting occasionally. Allow 25 to 30 minutes per lb. or use an oven thermometer. Serve with red cabbage, beets or pureed split peas.
