Salmon Croquettes
Ingredients:
2 c. flaked salmon
2 Tbs. fat
4 Tbs. flour
1 c. milk
1 tsp. salt
1 egg
3 Tbs. minced parsley
1 Tbs. lemon juice
1 tsp. Worcestershire sauce
1 c. bread crumbs
2 c. flaked salmon
2 Tbs. fat

Directions:
Make a thick white sauce with the fat, flour and milk.
Add seasonings.
Mix together the drained salmon, parsley, lemon juice and Worcestershire sauce.
Add the beaten egg and then stir in the bread crumbs and white sauce.
Shape into croquettes and chill 2 to 3 hours.
Fry in deep fat.
Makes 8 croquettes.
