Scalloped Spinach
Ingredients:
2 10 oz. pkg. frozen spinach
3/4 c. milk
3/4 c. shredded American cheese
3 beaten eggs
3 Tbs. chopped onion
1 c. soft bread crumbs
1 Tbs. butter, melted

Directions:
Cook spinach according to pkg. directions; drain well. Mix with milk, 1/2 c. of the cheese, eggs, onion, 1/2 tsp. salt, and dash pepper. Turn into greased 8x8x2" baking dish. bake at 350 for 25 minutes. Combine crumbs, remainiong cheese, and butter; sprinkle atop spinach. Bake till knife inserted off center comes out clean,10 to 15 minutes longer. Let stand 5 minutes before serving.
