Scalloped Eggplant
Ingredients:
1 lg. eggplant
2 tsp. butter
1 green pepper, chopped fine
1 sm. onion, chopped fine
2 tsp. salt Black pepper
1 c. buttered bread crumbs
1 can tomatoes

Directions:
Salt sliced eggplant; drain 15 to 30 minutes. Cook in water and drain. Mash. Add other ingredients except bread crumbs. Put in casserole dish; top with bread crumbs and bake 10-15 minutes. Serve.
