Spinach Balls
Ingredients:
1/2cup butter
2 large onions
2 boxes frozen chopped spinach
6 eggs
1 teaspoon seasoned salt
2 cups herbed stuffing mix
1 cup grated parmesan cheese
1/2 teaspoon thyme
1 teaspoon pepper
1/2 teaspoon garlic powder

Directions:
Melt butter in skillet, and saute onions. Defrost spinach and squeze dry. Add spinach to onions and cook 1-2 minutes. Combine eggs, seasoned salt, stuffing, cheese and seasonings. Add spinach mixture. Let mixture cool in refrigerator for an hour. Shape into 1" balls. Place on a foil-lined cookie sheet. Bake at 350 Degrees for 20 minutes, or until golden. Spinach balls may be frozen uncooked on cookie sheets, then wrapped air tight for later use.
Makes 40-50 Servings
