Spinach Salad
Ingredients:
1/2 lb. torn fresh spinach
2 tsp. unsalted sunflower seeds
1 carrot, thinly sliced
1/2 green pepper, chopped
8 oz. water chestnuts, sliced
2 Tbs. freshly grated Parmesan cheese

Directions:
Thoroughly wash and drain spinach. Add sunflower seeds, carrot, green pepper and water chestnuts to spinach in a bowl. Toss with oil and vinegar dressing. Top with Parmesan cheese. Makes 4 cups.
