Split Pea soup
Ingredients:
1 c. dried split peas
3 qt. water
1 ham bone
1 Tbs. minced onion
3 Tbs. butter
3 Tbs. flour
1 tsp. salt
Pepper
2 c. milk

Directions:
Soak the peas overnight in water, drain them in the morning and cover them with 3 qt. water. Add the ham bone and onion and cook them until they are soft. Melt the butter and stir in the flour until they are well blended and smooth. Add the salt, some pepper and the milk and cook, stirring constantly until the mixture thickens. Combine it with the peas and ham bone and cook it until the soup is rather thick.
