Stuffed Tomatoes
Ingredients:
6-8 tomatoes
1 lb. ground beef
Margarine
1/2 c. chopped onion
1 No. 2 can tomatoes
1 tsp. parsley flakes
1 tsp. dried mint
1 tsp. salt
1/2 c. uncooked rice
1 Tbs. brown sugar

Directions:
Cut tops from tomatoes; reserve. Hollow out tomatoes, invert to drain. Brown beef in margarine; add onion. Cook until transparent. Add remaining ingredients; bring to a boil. Fill tomatoes with meat mixture; replace reserved tops. Bake, uncovered, at 350 for 1 hour and 30 minutes.
Makes 6-8 Servings
