Sweet Potato Croquettes
Ingredients:
4 med. sweet potatoes
1 c. bread crumbs
1 egg
1 Tbs. sugar
Dash of salt
Oil, enough to fry

1 c. bread crumbs
1 egg
1 Tbs. sugar
Dash of salt
Oil, enough to fry
Directions:
Steam potatoes or boil in their jackets until tender. Peel, mash and add egg yolk, salt, sugar and 1/2 the bread crumbs. Beat egg white until stiff; stir into mixture. Form croquettes. Roll in bread crumbs and fry slowly in oil. Turn and brown on both dides.
Makes 6 Servings
