Sweet and Sour Pork Chops with Sweet Patatoes


4 Pork Chops
6 to 8 Sweet potatoes raw or canned
3 Tablespoons syrup from crushed pineapple
2 Tablespoons of minced onions
1 teaspoon cornstarch
1 cup crushed pineapple
2 Tablespoon Vinegar
1 Tablespoon soy sauce


Brown chops in skillet and drain the fat. Arrange potatoes around the chops, add syrup and cover. Cook over low heat for 20 minutes turning spuds. Measure 1 Tablespoon pork grease into a saucepan. Add onions and cook for 3 or 4 minutes. Sprinkle with cornstarch, stir in the pineapple, vinegar and soy sauce. Cook till thickened. Pour over chops and sprinkle with Paprika.
