Ingredients:
1 1/2 lbs. ground lean beef round
1 jar baby-pack strained carrots
1/2 c. tomato juice
1/4 c. chopped parsley
1 small onion, chopped

1/2 tsp. Italian seasoning
1/8 tsp. pepper

Directions:
Mix ground beef lightly with carrots, tomato juice, parsley, onion and seasonings until well-blended. Shape into 6 even-size rolls about 1" thick; place on rack in a shallow baking pan. Bake at 350 for 35 minutes, or until richly browned.
