Whole Grain Dinner Rolls
Ingredients:
2 3/4 to 3 1/4 c. all-purpose or whole wheat flour
1 pkg. active dry yeast
1/2 c. milk
1/2 c. sour cream
1/4 c. honey
1/4 c. butter
2 eggs
1 c. whole wheat, rye, oat or buckwheat flour
1/2 c. toasted wheat germ
2 3/4 to 3 1/4 c. all-purpose or whole wheat flour
1 pkg. active dry yeast
1/2 c. milk
1/2 c. sour cream
1/4 c. honey
1/4 c. butter
2 eggs
1 c. whole wheat, rye, oat or buckwheat flour
1/2 c. toasted wheat germ
Directions:
In a large mixer bowl combine 1 1/2 c. of the white flour and the yeast. Heat milk, sour cream, honey,butter and 1/2 tsp. salt till warm (115 to 120 degrees). Add to flour mixture; add eggs. Beat on low speed 1/2 minute. Beat 3 minutes on high speed. Stir in 1 c. whole wheat flour, wheat germ, and as much of the tremaining white flour as you can. On lightly floured surface knead in enough of the remaining white flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in lightly greased bowl; turn once. Cover; let rise in a warm place till double (1 hour). Punch down; divide dough in half. Cover; let rest 10 minutes. Shape into rolls. cover, let rise till nearly double (30 minutes). Bake at 375 for 13 to 15 minutes. Brush with melted butter, if desired. Makes 24 to 30 rolls.
