Mushroom Rolls
Ingredients:
1/2 lb. mushrooms
1/4 c. butter
3 Tbs. flour
3/4 tsp. salt
1 c. light cream
2 tsp. chives, minced
1 tsp. lemon juice
1 family-size loaf sliced fresh white bread
1/2 lb. mushrooms

Directions:
Clean and finely chop the mushrooms. Saute for 5 minutes in butter. Blend the flour and salt. Stir in the light cream. Cook until thick. Add the chives and lemon juice. Remove the crust from the bread. Roll each slice thin and spread with the mixture. Roll up. Pack and freeze, if desired. When ready to serve, defrost. Cut each roll in half and toast on all sides in 400 degree oven. Makes 3 1/2 dozen.
