Yankee Bacon Bake
Ingredients:
1/2 lb sliced bacon
1/2 c. yellow cornmeal
1 c. milk
1/2 c. flour
1 Tbs. sugar
1 tsp. baking powder
1/2 tsp. salt
1 c. milk
3 beaten egg yolks
3 stiffly beaten egg whites
1/2 lb sliced bacon

Directions:
Cook bacon till crisp; drain and coarsely crumble. Set bacon aside. In saucepan stir cornmeal into 1 c. milk; cook stirring constantly, till mixture is thickened and bubbly. Remove from heat. Stir together flour, sugar, baking powder, and salt; blend into cornmeal mixture. Stir in the remaining 1 c. milk and egg yolks; fold in beaten egg whites and crumbled bacon. Turn into a greased 1 1/2 qt. casserole. Bake, uncovered, at 325 for 55 to 60 minutes.
