Banana Loaf
Ingredients:
1 3/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
3/4 c. sugar
1 1/4 tsp. cream of tartar
2 eggs, beaten
1/2 c. vegetable oil
2 ripe bananas, mashed

Directions:
Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine remaining ingredients; add to dry mixture, stirring until moistened. Pour batter into a greased 9x5x3" loafpan. Bake at 350 for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and let cool on wire rack.
