Blackberry Cobbler
Ingredients:
4-5 c. blackberries
14 Tbs. sugar
1 Tbs. cornstarch
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
10 Tbs. well-chilled butter, cut into 10 pieces
1/3 c. milk

Directions:
Bring berries, 12 Tbs. sugar and cornstarch to boil in heavy large saucepan over medium heat, stirring constantly. Reduce heat and simmer 3 minutes. Remove from heat.
Preheat oven to 400. Butter 8" square baking pan. Combine remaining 2 Tbs. sugar, flour, baking powder and salt in large bowl. Cut in 8 Tbs. butter with pastry blender until mixture resembles coarse meal. Gradually add milk and blend with fork until mixture just comes together. Turn dough out onto generously floured surface and knead several times. Roll dough out to rectangle 1/4 inch thick. Drape dough in prepared pan, allowing excess to hang over 2 edges. Pour in berry mixture. Bring edges of dough to enclose mixture. Make several slashes in top of dough. Dot with remaining 2 Tbs.butter. Bake until pastry is lightly browned, about 40 minutes. Serve cobbler immediately.
