Cashew Crunch Cookies
Ingredients:
1 c. butter, softened
3/4 c. brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1 1/2 c. finely chopped cashews

Directions:
Beat butter at medium speed; gradually add sugars, mixing well. Add egg and vanilla; beat well. Combine flour, soda, and cream of tartar; gradually add to creamed mixture, mixing after each addition. Stir in cashews. Drop dough by rounded teaspoonfuls onto lightly greased cookie sheets, and bake at 350 for 10 to 12 minutes or until lightly browned. Makes 7 dozen.
