Chewy Date Cookies
Ingredients:
2 c. chopped dates
1/2 c. brown sugar
1/2 c. water
1 c. sugar
1 c. butter, softened
1 tsp. vanilla
3 eggs
4 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts

Directions:
In medium saucepan, combine dates, 1/2 c. sugar and water. Cook over medium heat until thickened, stirring occasionally. Cool.
Heat oven to 375 degrees. Grease cookie sheets. In large bowl, beat brown sugar, 1/2 c. sugar and butter until light and fluffy. Add vanilla and eggs; blend well. Stir in flour, baking soda and salt; mix well. Stir in date mixture and nuts. Drop dough by rounded teaspoonfuls 2" apart onto greased cookie sheets.
Bake at 375 for 8-10 minutes or until golden brown. Immediately remove from cookie sheets.
Makes about 6 dozen cookies.
