Chicken Vegetable Soup
Ingredients:
1 chicken carass
2 cans chicken broth
4 cups water
1 cup finely chopped onion
1 cup finely chopped carrot
1 cup finely chopped celery
1 medium potato finely chopped
1 small can great northern beans
chicken soup base
Chopped fresh parsley

Directions:
Cook the carcass of a roasted or rotisserie chicken in water. Remove the carcass and debone, finely chopping the meat.Add the onion, carrot, celery, potato, beans. Cook till the vegetables are tender. Add chicken soup base to taste. Add some chopped fresh parsley.
A turkey carcass could also be used.
Makes 4 Servings
