Ingredients:
3 beaten eggs
1 1/2 c. sugar
1/2 c. butter
4 tsp. lemon juice
1 tsp. vanilla
1 1/3 c. flaked coconut
8 unbaked tart shells or 9" pie shell

Directions:
Combine eggs, sugar, butter, lemon juice and vanilla; stir in coconut. Pour into unbaked tart shells. Bake in 350 oven for 40 minutes or till a knife inserted off center comes out clean. Cool.
