Fresh Apple Cake
Ingredients:
4 c. chopped apples
1 1/2 c. sugar
2 c. flour
2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs, beaten
2 tsp. vanilla
3/4 c. veg. oil
1/2 c. chopped walnuts

Directions:
Place chopped apples in a bowl and cover with sugar. Let stand while you mix flour, cinnamon, baking soda and salt. Beat eggs and add vanilla. Combine all ingredients and stir well. Add 1/4 c. chopped walnuts to batter. Pour into greased and floured 13x9" cake pan. Sprinkle remaining nuts over batter. Bake at 350 for 50 to 60 minutes.
