Garlic Mushrooms
Ingredients:
1 lb. med. cap mushrooms
6 oz. softened butter
2 garlic cloves, crushed
Juice and grated rind of 1/2 lemon
2 Tbs. fresh chopped parsley
Salt and pepper
Fresh crusty bread, to serve

Directions:
Preheat oven to 425 degrees. Remove the mushroom stems and arrange the mushrooms, rounded side down, in a shallow dish. Mix the butter, garlic, lemon juice and rind, parsley, salt, and pepper together in a bowl. Divide the garlic butter between the mushroom caps. Bake in the oven for 15 to 20 minutes, until the mushrooms are soft and the garlic butter is sizzling. Serve at once with crusty bread.
