Harvest Cookies
Ingredients:
1/3 c. vegetable oil
1 egg
1 c. squash, cooked, drained, and mashed
1 1/2 c. unbleached white flour
1/2 tsp. baking powder
1 tysp. nutmeg
1/2 tsp. cinnamon
1 1/2 c. finely chopped dates
TOPPING:
Walnut pieces
1/3 c. vegetable oil

1 c. squash, cooked, drained, and mashed
1 1/2 c. unbleached white flour
1/2 tsp. baking powder
1 tysp. nutmeg
1/2 tsp. cinnamon
1 1/2 c. finely chopped dates
TOPPING:
Walnut pieces
Directions:
Beat together oil, egg and squash. Add flour, baking powder and spices. Beat well and stir in chopped dates. Drop batter by small teaspoonfuls onto oiled baking sheets. Top each with a walnut piece. Bake at 350 for 10 minutes or until firm to the touch. Cool on wire racks. Makes 3 dozen.
