Potato Chip Cookies
Ingredients:
2 c. butter (no substitutes), softened
1 c. sugar
4 c. flour
2 tsp. vanilla extract
1 c. crushed potato chips
1 c. chopped pecans

Directions:
In a large mixing bowl, cream butter, and sugar. Gradually add flour, beating until combined. Beat in the vanilla. Stir in potato chips and nuts, Cover and refrigerate for 1 hour. Drop dough by tablespoonfuls 2" apart onto ungreased baking sheets. Bake at 350 for 12-15 minutes or until golden brown. Remove to wire racks to cool. Makes 5 dozen.
