Lazy Cake
Ingredients:
4 eggs
2 c. sugar
2 tsp. vanilla extract
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
FROSTING:
1 1/2 c. brown sugar
3/4 c. butter
1/2 c. half-and-half cream
2 c. flaked coconut
4 eggs
2 c. sugar
2 tsp. vanilla extract
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
FROSTING:
1 1/2 c. brown sugar
3/4 c. butter
1/2 c. half-and-half cream
2 c. flaked coconut
Directions:
In a mixing bowl, beat eggs, sugar and vanilla until thick, about 4 minutes. Combine flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. Pour into a greased 13x9x2" baking pan. Bake at 350 for 354-40 minutes or until cake tests done. Combine frosting ingredients; spread over warm cake. Broil until lightly browned, about 3-4 minutes.
