Lobster Bisque
Ingredients:
3 lobster tails, cooked, diced and set aside
Crush shells
Add 2 1/2 c. chicken stock
1 onion, diced
4 stalks celery with leaves
2 whole cloves
1 bay leaf
6 peppercorns

Add 2 1/2 c. chicken stock

Directions:
Bring to boil, simmer 1/2 hour. Strain the stock. Melt 4 Tbs. butter and stir in 4 Tbs. flour. Gradually add 3 c. milk, salt and 1/4 tsp. nutmeg. When sauce is smooth and boiling, add lobster and broth. simmer 5 minutes. Take off heat. Stir in 1 c. scalded cream. Garnish with parsley.
