Ingredients:
4 to 5 medium peaches, divided
1 c. flour plus 1 Tbs.
1 c. old-fashioned rolled oats
3/4 c. brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1 egg
1/4 c. vegetable oil
1/4 c. buttermilk
1/2 c. raisins
1/2 c. chopped pecans

Directions:
Preheat oven to 400 degrees. Line 12 muffin cups with paper cupcake liners or grease the muffin cups.
Peel all the peaches; then dice 1 peach and drain. Puree the remaining peaches to make 3/4 c. of peach puree. In a large bowl, combine 1 c. of flour, oats, brown sugar, baking powder and cinnamon; mix well. In another bowl, beat egg; add oil, peach puree and buttermilk. Pour liquid ingredients into flour mixture and mix until just moistened. In a small bowl, mix drained, diced peach with raisins, pecans and remaining 1 Tbs. flour. Fold raisin mixture into batter; mix well. Spoon into muffin cups and bake in 400 degree oven for 30 minutes, or until tests done.
