Mushroom Burgers
Ingredients:
1 lb. mixed flat and cremini mushrooms
8 Tbs. olive oil
2 oz. butter
4 shallots, finely chopped
1 tsp.Dijon mustard
1 Tbs. fresh tarragon, chopped
4 c. fresh brown bread crumbs
Salt and pepper
6 burger buns
Butter, for spreading
1 lb. mixed flat and cremini mushrooms
8 Tbs. olive oil
2 oz. butter
4 shallots, finely chopped
1 tsp.Dijon mustard
1 Tbs. fresh tarragon, chopped
4 c. fresh brown bread crumbs
Salt and pepper
6 burger buns
Butter, for spreading
Directions:
Place mushrooms in a food processor and process briefly until chopped. Heat 4 Tbs. of the oil and the butter in a large skillet. Add the shallots and cook for 5 minutes, until soft. Add the chopped mushrooms and cook, stirring frequently for 5 minutes. Let the mixture cool, then stir in the mustard, tarragon, bread crumbs,and salt and pepper to taste. Mix well, then divide the mixture into 6 portions and shape into patties. Let chill for 1 hour. Preheat the broiler to medium. Heat the remaining oil in skillet. Add the burgers, in batches if necessary, and cook 5 minutes on each side until golden and cooked through. Split the burger buns in half. Toast the cut sides of the burger buns under the hot broiler, then butter lightly. Serve the burgers in the buns with lettuce and mustard.
