Mushroom-Cheese Sandwiches
Ingredients:
1 lb. mushrooms, chopped
2 Tbs. butter
1 c. grated Cheddar cheese
1 egg, slightly beaten
8 slices bread
2 med. tomatoes, sliced

Directions:
Saute mushrooms in butter about 5 minutes. Add cheese and egg and mix well. Toast bread on 1 side. Spread mixture on untoasted side. Top with tomato slice and put under broiler 5 to 8 minutes, or until heated.
