Mushrooms and Potatoes
Ingredients:
3 med. potatoes
Salt
2 Tbs. butter
1/4 lb. mushrooms, coarsely chopped
2 shallots, minced
1 Tsp. chopped chives
Cracked pepper to taste
1 egg yolk
1 tsp. vinegar
Chopped parsley

Directions:
Barely cook potatoes in small amount of boiling salted water. Peel and cut in thick slices. In saucepan, melt the butter and add hot sliced potatoes, mushrooms, shallots, chives and pepper. Add 1/3 c. water, cover and steam a few minutes. Then uncover and cook slowly to reduce liquid. Beat together egg yolk and vinegar. Remove saucepan from heat and stir in egg mixture. Sprinkle with parsley.
