Potato Pancakes
Ingredients:
2 eggs, separated
1 c. mashed potatoes
1/2 c. flour
1 c. milk
2 tsp. baking powder

Directions:
Add egg yolks to the mashed potatoes and mix well. add the flour and baking powder alternately with the milk until smooth. Fold in the stiffly beaten egg whites and drop by spoonsfuls on a hot greased skillet. Finely chopped onion may be added to the batter to add flavor. Serve hot.
