Potato Soup
Ingredients:
8 medium potatoes, cubed
1 quart milk
1/4 tsp. pepper
1/2 c. flour
2-4 Tbs. milk
1 onion, chopped
2 tsp. salt
1 Tbs. butter
1 egg, well beaten
2 Tbs. dried parsley

Directions:
Cook potatoes and onion in boiling salted water until tender. Drain. Add 1 qt. milk to potatoes and heat.Blend in salt, pepper and parsley. Cut butter into flour, blend in egg and milk using only enough milk to make mixture thin enough to drop into hot soup. Drop by teaspoonfuls into the hot soup, cover and cook about 10 minutes. Serve at once.
