Rhubarb Pie
Ingredients:
2 c. rhubarb
1 egg
1 scant c. sugar
Crust for double crust pie
2 c. rhubarb

Directions:
Cut rhubarb fine and cover with hot water. Beat egg and sugar until thick. Drain rhubarb and add to egg and sugar mixture. Put in pie shell. Bake at 425 until top is light brown. Then turn down to 375 degrees and bake until rhubarb is tender.
Makes 6-8 Servings
