Salmon Pasta Salad
Ingredients:
1 can (7 3/4 oz.) salmon
3 c. cooked shell macaroni, drained and cooled
1/2 c. mozzarelle cheese, cut into 2" jukienne strips
1/2 c. minced parsley
Lemon dressing
Crisp greens
Tomato wedges
Grated Parmesan cheese
Lemon Dressing:
Combine 1/2 c. olive oil
2 Tbs. lemon juice
1 Tbs. reserved salmon liquid
1 clove minced
1 tsp. salt
1/2 tsp. each dill weed, crushed and grated lemon peel ans a dash ground black pepper in a small bowl; blend well. Stir in 1/4 c. grated Parmesan cheese. Makes about 3/4 c.

Directions:
Drain salmon, reserving 1 Tbs. liquid; break into chunks. Combine macaroni, cheese and parsley in large bowl; add lemon dressing and toss lightly. Mound on lettuce-lined platter or in a salad bowl; garnish with tomato wedges. Pass Parmesan cheese.
Makes 4-6 Servings
